We've always used pork. But I like the sound of lamb.

Who wants their venny sausages to taste like lamb?
Pork is far more subtle and won’t bugger up the taste

I've always used wild pork with mine.

Had a friend use hogget and the results were the fat tended to clump resulting in either a fatty sheep sausage or a semi dry venison sausage.

If you are making them yourself make sure you mix well

Beef fat is also tasty for sausages
