My wife has been spinning for trout, but we are basically saltwater fishers. We are off to Otago/Southland for Oct/Nov, and I am wondering where I can get info on softbaiting for trout and Salmon, and I can't seem to get the search function working.

Have a look on youtube Dave , theres heaps of vids.If youre passing through Christchurch , call into the Fishermans loft or Hunt and fishing Chch. All the guys there are skilled at softbaiting and they’ll love to sell you something.

As Rabbiter said, find a bridge in Southland - then there is two choices...
Upstream, or downstream. Get yourself some Storm baits and you choose the direction. There is fish both ways!
