Freezing venison

Having a debate with a mate - I have a bunch of trimmings for sausages and mince frozen, he reckons not safe to thaw, process and refreeze. What do you reckon?

If you mince them semi frozen (it goes better I think) and keep them well chilled while you're making the snags you should be fine.  I have semi defrosted meat before to break it into smaller packs before re freezing.  Never had problems.

Its just a old wifes tale that thawed meat cant be refrozen .Been doing it for many years duck/venison and beef never had a problem. Grin Cheesy

if you saw what went on out back of some of the bigger butcher shops you would be shocked......as to your question....it will be fine...dont leave it out for a week like...and keep it chilled as possible. I use a bucket and lid to put all my trimmings in,when its full enough we make up a batch of bangers.

Sweet as I recon as long as it's kept chilled and gets straight back in the freezer.

Awesome episode of the MeatEater podcast this week that runs through the science of meat tenderness and quality. I think the episode is called "red cutter" well worth a listen check it out at themeateater.com Wink
