Here is a bit more info, they go into real detail which is handy.
the main thing I have found that usually people dont tell you is its best to keep the meat/veges off the bottom so they dont burn and stick, till I find a good mesh grate with little legs (bout and inch high) Im using a normal dinner plate.
Iv been doing sheep cause its easy when there a real fatty meat to get it right, and putting a little water in the bottom so the veges dont get too dry.

Get a hold of a copy of the old NZFS cookbook that they used to issue to the cullers. Lots of handy tips in that for camp oven cooking over an open fire

I put an aluminium sponge dish upside down in the bottom for roasting or baking on gas. Keeps the heat more even. Doesn't matter on a fire you can put coals on the lid
Never argue with an idiot anyone watching may not be able to tell the difference

You don't really need a rack inside when roasting. Just get the heat right. Either hang the oven, coals on the lid, over coals and adjust the height. In camp we always had a variety of wire hooks for this. Or take coals from the fire and place away from the wire ,sit the oven on these ,change coals if and when necessary. I guess experience is the best teacher, there being no great mystery to it.

Still use the camp oven i have had for 45 years often .In the main it is used in the Camper van or flat these days .I think it is still the best way to fry a steak.

Old habits eh Cliff, just the bees knees fi sure. The cook favours the heavy oven over the flash electric see through lid job so do I,,little gas, no electricity

Aye, and if purchasing a new cast iron model it will need seasoning. The Chinese made ovens are poorly cast, I don't know if any NZ companies still make them but a company in Shepparton ,Victoria.[Aust] cast beautiful ovens in a variety of sizes. Furphy is the brand name. The difference in cooking with a well cast oven and a poorly cast one is huge.
