New Yorkers breeding/eating rabbits

So they eat New Zealand rabbits, yet we have European Rabbits??

I think I should go from pest controller to pest controller/breeder for fine dining.

Whole rabbits are between $20 and $25 each at places like Moore-Wilsons here in Welly.

Every rabbit I shoot I have half a dozen people who would take it off my hands to cook and eat. My neighbor is a french chef, and you wouldn't believe what she can make with rabbit. Her rabbit pate delicious.  Cheesy

US$ TOO!    Smiley

Quote:
A seven-pound live rabbit might weigh four pounds cleaned and cost a restaurant $25 to $30. D’Artagnan sells a whole fryer rabbit for $36.99 on its Web site.

Rabbit is in my opinion the most under rated meat in the world. It's delicious, lean and mostly very cheap. Unless your a New Yorkan.

One thought just crossed my mind. What are they going to do with all the rabbits when this fad wears off? My bet is that America will have the next rabbit population explosion.

I estimate if you started with 100 rabbits (50 does/50 bucks) and sold half of what was bred. after 7 months you would have sold approx 9500 rabbits & before expenses $237,500 @ $25 per rabbit!
