right first off im not a master nor do i claim to be just had one at home so i decided to take some pics for those who aint got a clue
after the hole has been dug build a square structure out of good hard wood we used totra as it gives off good heat, poke stones and iron into the structure and light. next wait till the fire burns down we burned this one bout 3.5 hours. make sure stones and iron stay in the hottest part of the fire. right here comes the fun part get all your meat and vege ready make sure to line baskets with cabage leaves put sputs,cabage carrots kumura pumpkin in musilin bags. next step is a cooker time to seperate in the ashes from the iron ect.grab shovels and meke up some hooks for irons and start the mission this should be done asap once then lay irons and stones down in the ember free sheet. place baskets on irons meat first spuds second rest on top. lay sheet over baskets to keep food clean from the saks then cover the lot with saks they must be wet so soak them in a drum of water.then bury the lot make sure thers no steam getting out of the pile now the easy part drink piss wait for round for about four hours. then rake of the soil carefully and pull the saks off the food watch out te steam dont get ya! once all is reveald carry baskets away. should look something like this.

hmmm makes me hungry... Well one, I tend to prefer a lower stack and have the baskets side by side in a wider hole so that the food is all cooked at a more even temperature, I also throw a sheet of iron over the rocks before putting the baskets down which helps prevent smoke and keeps cleaner. If you find soild with a lot of clay you will have an awesome hangi, it bakes like brick and seals the heat and moisture in, you end up with a red hard walled pit and can reuse it over and over again. Good on you for putting that up Im sure a lot of people have always wanted to give it a go but not known how. P.s Pig fat on teh rocks before the basket goes on puts a nice sweet flavour through it all

good post 3030. Another tip is to have you fire next to the hole and when the stones/rocks/iron are hot enough just toss them into the actual cooking pit, means you don't have to clear all the fire debris out of the hole and it can be a lot cleaner. Also similar to HH's tip, the potato peels, pumpkin seeds and all the vege scraps thrown on to the hangi stones can help with flavour too!
