You've posted a massive open-ended question there Bob!
There are good fresh-water fishing oppurtunitys in both islands. The central North Island rivers and lakes are generally regarded as the mecca for fishing in NZ.
Your own background and experience will influence your choice of destination(s).
Have a look at www.bishfish.co.nz for good backgroung on NZ fishing.
Guides in NZ are generally well priced and extremely good value esp if your time is limited. Try a search, many have homepages.
