I've only been in Canterbury for halfa year and the only decent fishing spot i've been to that's close to chrishchurch is the south branch of the Waimakariri.
Don't go to little river near the township because it is the shittiest river i've ever seen in my life. I've fished the avon but it's to bloody polluted and
is rather disgusting. Maate if you find any decent spots mail them to me.
